Ingredients:
- Dal – I cup
- Turmeric – ½ tbsp.
- Chilli powder – ½ tbsp.
- Sambar powder – 1 tbsp
- Green chillies – 4 (sliced long)
- Onions – 2 big (sliced long)
- Vegetables –pieces (cut)
- Hing depends on taste
- Garlic crushed – 2
- Chana dal – 5 seeds
- Urad dal – 6 seeds
- Mustard seeds – ½ tbsp
- Cumin seeds – ¼ tbsp.
- Few curry leaves
- Coriander
- Oil
- Water
- Tamarind if necessary
How to prepare Sambar:
- Pressure cook 1cup of Toordal or red gram in 2 cups of water, mash the dal or grind well.
- Blend raw tomatoes in a mixer.
- Boil vegetables in water and drain water out.
- Heat oil, fry boiled vegetables, onions and chillies for 10 minutes.
- Pour ground dal, tomato puree and water.
- Add chilli powder, salt and sambar powder to boiling container.
- Continue boiling until bubbles appear on the top and become concentrated.
- Switch off the flame, add coriander and tadka to it.
Tadka/Talimpu:
Fry chana dal, urad dal, mustard seeds, cumin seeds, curry leaves, crushed garlic (Hinge if you prefer).
List of vegetables using in sambar :
Drum sticks, bottle guard, ladyfingers, raddish, brinjal,carrot and sweet potato(instead of jaggery).
*TIPS:
Tamarind /lime juice/grated mango/tomato puree can be used.
Sweet potato can be used instead of jaggery.
