Cocunut Rice

Ingredients:

  • Coconut – one (to extract coconut milk) or use a tin of coconut milk if available.
  • Kasuri methi – 1 tbsp
  • Cloves – 1 tbsp
  • Cinnamon sticks – three small
  • Bay leaves – 2
  • Shajeera – ½ tbsp
  • Ghee – 1 tbsp
  • Oil – 3 tbsp
  • Onions(sliced long) – one big
  • Green chillies (cut,longly) – 6
  • Cashew nuts – few
  • Rice – 2 cups
  • Water – 4 cups
  • Ginger garlic paste – 1 tbsp
  • Cilantro leaves – few (chopped)
  • Mint leaves – few (chopped)
  • Cashew nuts – poppy seeds paste – 1 tbsp
  • Salt to taste

Before going to start, Lets see how to prepare Coconut milk and Cashew nut – Poppy seeds paste which are important in this recipe.

How to extract coconut milk from coconut:

  1. Break the coconut into two equal halves.
  2. Grated Coconut is prepare from the two pieces.
  3. Boil water in a container and remove flame, transfer grated coconut into boiled water and mix well, leave for 5 sec.
  4. Filter the coconut pulp from the water.
  5. Coconut milk extract is used in the following recipe.

*TIP: Coconut pulp can be taken with sugar or we can make chutney with it.

How to make Cashew nut – Poppy seeds Paste:

  1. Soak the cashews in warm milk for half an hour and soak the poppy seeds in warm water for an hour.
  2. Blend the soaked cashews and poppy seeds together to make a thick paste.
  3. Place the excess paste in a air tight container and store it in a refrigerator. you can use this paste in any curries.

How to cook coconut rice

  1. Heat oil in a cooking pan and roast Cashew nuts, Cloves, Cinnamon, Bay leaves, Shajeera, Kasuri Methi in oil.
  2. Add onions, green chillies to it and fried till the onions turn golden brown colour.
  3. Add ginger garlic paste and fried in order that paste do not stick to the walls .
  4. Wash the rice and keep aside.
  5. Pour water into the pan and add salt into it.
  6. Then add salt, coconut milk and cashew nut – poppy seeds paste, cilantro, Mint leaves to it.
  7. Mix well and let it boil for few minutes till you can see can the bubbles and fumes coming out from the water.
  8. Add the ghee. Mix the water with a stick and add washed rice to it and cook.
  9. Place the lid on the pan and cook well, occasional stirring is necessary until the rice has to be cooked.
  10. Follow the same procedure of cooking the steamed rice to cook this rice.
