With all those beta-carotenes and Vitamin -A in carrots, we have to eat them for our health. Not only Vitamins it contains minerals which prevent tooth damage and also carrots help in Cancer Prevention and maintain Healthy glowing skin. So try to eat as many raw carrots as you can even while you prepare the recipe 🙂
Lets see the preparation of Diced Carrot Fry in English or Carrot Vepudu in Telugu :
First soak the carrots in salt water and wash them well to remove dirt on them. Peel off the skin and dice them.
Ingredients:
- Carrots – diced into small pieces (3 big)
- Oil – 4 tbsp
- Mustard seeds – 1 tbsp
- Urad dal – 1/2 tbsp
- Chana dal – 1/2 tbsp
- Kasuri methi – 1 tbsp
- Curry leaves – few
- Onions – 2 (Diced)
- Dry Red chillies – 4
- Salt
- Red chilli powder – 1 tbsp
- Gram Masala powder – 1 tbsp
- Chat masala powder – 1 tbsp
How to Prepare Diced Carrot Fry or Carrot Vepudu:
- Heat oil in a pan and add mustard seeds and let it splutter.
- Then add urad dal, chana dal and fry them well.
- Add red chillies, curry leaves, kasuri methi and onions.
- Fry them until they change to golden brown colour.
- Then add diced carrot pieces and fry them for 10 minutes.
- Then place a lid on it and cook for 15 minutes. Stir occasionally.
- Then add some salt, chilli powder, garam masala and chat powder (optional).
- Cook continuously (with the lid on), till the carrot pieces becomes soft.
- Serve the carrot fry with steamed rice , chapathi or pulkas.
- It tastes good. It is a good side dish for vegetarian courses.
Notes:
- If you want it extra spicy add few chopped green chillies along with curry leaves. Make sure you don’t overdo it, as it might spoil the taste.
- If the carrots are fresh and clean, you can be spared from peeling them. Just dice them.
