Tomato rice is one of the delicious special rices that can be prepare in different styles like Indian,Spanish and Mexican. Indian tomato rice is spicy and can also be prepare in different ways like tomato pulao, tomato fried rice. It is known as Tomato annam in telugu and Thakkali sadham in tamil. Generally tomato puree is use to prepare the rice. But, I made this tomato rice using tomato ketchup and tomato pieces. It is tangy and tastes so good. I will post the other versions of tomato rice soon.
Ingredients:
- Cooked Basmati Rice – 4 cups
- Oil – 2 -3 spoons
- Ghee – 2 spoons
- Salt to taste
- Turmeric for colour – ½ spoon
- Garam masala powder – 1 spoon
- Chaat masala powder – 1 spoon
- Pav bhaji Masala – 1 spoon
- Tomato ketchup – 6 spoons
Spices to prepare Tomato Rice:
- Cashew nuts – 20
- Cinnamon sticks – 2
- Cloves – 4
- Cardamom pods cracked – 2
- A pinch of Ajinomoto
- Bay leaves – 5
- Fenugreek – 1 spoon
- Star shaped anise – 3
- Stone flowers – 3
- Jeera – 1 spoon
- Javetri – 2
Other Ingredients:
- 1 big Onion – sliced
- 4 Green chillies – sliced/slit
- Coriander/cilantro leaves – ½ cup chopped
- Mint leaves – 1/4cup chopped
- Ginger Garlic paste – 3 spoons
- Soaked peas – ½ cup
- Tomato pieces – 1 cup
- yellow bell peppers – 1/2 cup chopped
How to prepare Tomato Rice:
- Heat oil and ghee in a frying pan for one minute on simmer.
- Then add the spices into frying pan and fry the following ingredients one by one:
- Jeera – Cardamom pods – cloves – Cinnamon Stick – Fenugreek – Star shaped anise – Stone flowers- Javetri – Bay leaves
- Add green chillies and also onion pieces and saute on a medium flame for 4-5 minutes.
- Little bit turmeric, few mint leaves followed by Ginger Garlic paste has to be added and fry well for another 5 minutes on a high flame.
- Add Coriander leaves, yellow bell peppers, soaked peas followed by finely chopped tomato pieces and fry well on a medium flame for 5 minutes.
- Sprinkle little bit salt and ajinomoto, Place the lid and cook until tomato pieces soften.
- Then add Chaat masala, Pav bhaji masala, Garam masala and tomato ketchup into the pan.
- Mix well and stir-fry the whole content for 3 minutes.
- Then add boiled Basmati Rice and also some salt to the content .
- Mix well, till the above cooked tomato mixture is completely absorbed by the white basmati rice.
- Stir-fry the whole content for 5 minutes.
- Then tasty hot tomato rice is ready to taste.
- Have the rice as it is with out any combination chutneys/curries.
Tips:
- Care should be taken while mixing the rice because there is a chance of breaking Rice.
- Saturate amount of salt can be added when cooking the rice.
