Vegetable pulao is one of the quick and easy recipes to prepare. It is simple yet a delicious recipe. One can make it on festival days/for lunch box/for a quick cook for a surprise guest. If you like spicy food just add more different spices and more green chillies to the suggested quantity.
Ingredients:
- Basmati Rice – 4 cups
- Oil – 4 spoons (or ghee for more taste)
- Ghee – 2 spoons
- Salt to taste
- Turmeric for colour – ½ spoon
- Orange food colour
- Maroon food colour
Spices used for Pula0:
- Cashew nuts – 20
- Garlic bulbs – 5
- Cinnamon sticks – 3
- Cloves – 6
- Cardamom pods cracked – 4
- A pinch of Ajinomoto
- Bay leaves – 5
- Fenugreek – 1 spoon
- Star shaped anise – 3
- Stone flowers – 3
- Shajeera – 1 spoon
- Javetri – 4
Other Ingredients:
- Sliced Onions – 1 big onion
- Green chillies – 8 sliced/slit
- Coriander/cilantro leaves – ½ cup chopped
- Mint leaves – few chopped
- Ginger Garlic paste – 2 spoons
- Poppy seeds and cashew nuts paste – 1 spoon
- Vegetables – 2 cups
- Water – 7 cups
How to prepare Vegetable Pulao:
Heat oil in a deep wide container for one minute on simmer.
Add biryani spices and cashews into the container one after another as follows and fry them: Garlic bulbs – Shajeera – Cardamom pods – Cloves – Cinnamon Stick – Fenugreek – Star shaped anise – Stone flowers- Javetri – Bay leaves – Cashew nuts.
Add any other biryani spices based on your interest, followed by green chillies.
Fry the green chillies and add onion pieces, sauté till golden brown colour.
Vegetables like Soaked peas, carrot pieces, potato pieces, tomato pieces (should be fried in the last to avoid stickness), – 2 cups is added to the container and saute well for few minutes.
Add chopped Mint leaves followed by Ginger Garlic paste and fry continuously on a simmer to avoid stickiness.
Add 7 cups of water to the pan along with salt and ajinomoto to it and boil well. Lastly, add Coriander/cilantro leaves and Fry well.
Add ghee, poppy seeds – Cashew nut paste and one spoon Garam masala powder to it. Add cleanly washed Basmati Rice to the water and mix well.
Cook for 10 min without a lid on high flame and then mix well and cook for another 10 min on simmer. Then add food colours to the rice on two sides (if using one colour pour anywhere).
Finally cook for 10 min with a lid on simmer. Hot tasty vegetable pulao is ready to taste.
The best side dish for vegetable pulao is Raitha or Potato kurma or Dum Aloo or Brinjal Curry or Drumsticks masala gravy or Cashew curry.
Note:
- To cook vegetable pulao in pressure cooker follow 1/2 cup water for 1 cup rice and 3 whistles.
- When you use electric cooker use 2 cups of water for one cup rice.
