Yogurt Rice or Curd Rice

Yougurt rice, Curd rice, Dadyodanam, Dahi bath, Bakala bath, Thairsadam, Perugannam e.t.c., depends upon the region and the ingredients used it falls into different names but all these recipes are made with the same basic which is nothing but yogurt rice/Curd rice. It can be prepared by two ways:

First Method:

Ingredients for curd rice/yogurt rice:

  • Chopped onions: one
  • Chopped chillies: two
  • Milk: one litre
  • Yogurt: one spoon
  • Boiled rice: two cups

How to prepare basic yogurt/Curd Rice:

  1. The milk should be boiled and brought into warm temperature.
  2. The boiled rice must be in room temperature.
  3. Then mix the chopped chillies and onions into the rice.
  4. Add boiled milk to the rice and mix well.
  5. Make sure that the rice should be invisible after mixing, based on that the rice and milk quantity depends.
  6. Add one spoon yogurt to that and mix well.
  7. Cover it with a lid at leave it at room temperature for milk to ferment.
  8. After 5-6 hours open the lid and add some salt to it and mix well.
  9. Lastly, add a half cup of milk to it and mix well to bring the recipe smoothie.
  10. It is very healthy and tasty.
  11. Then the yogurt rice is ready.

The alternative/Second Method :

  1. Mix Yogurt, salt and boiled rice.
  2. Add milk and mix well.
  3. The yogurt rice is ready.
  4. You can choose any procedure, but the previous one is preferable.

How to temper the Yogurt Rice:

Ingredients:

  • Black mustard seeds: 1tbsp
  • Chana dal: 2tbsp
  • Urad dal:1tbsp
  • Cumin seeds : ¼ tbsp.
  • Red chillies:3
  • Ginger: small piece chopped
  • Curry leaves: few
  • Cilantro leaves : few
  • Cashew nuts/ground nuts : 2 spoons
  • Asafoetida : ¼ tbsp.

Fry the ingredients in cooking oil/ghee and mix well it with the above any one of curd rice.

NOTE :

You can add pomegranate seeds, grapes, cashew nuts, Black currant, strawberry, Banana, Mango or any other fruits and  mix well to sweeten the curd rice, it will give fruity odour and taste. It has a separate name called Bakala bath.

You can add Grated carrot, Grated coriander, Grated cabbage, grated green chillies, and above temper and salt to the curd rice to make it as healthy diet.

Healthy Yogurt:

  • Raw Carrot grated
  • Corriander grated
  • Mint leaves grated
  • Cabbage grated
  • Onion grated
  • Green chillies small pieces
  • Lemon Juice two spoons
  • Dry Ginger powder half spoon
  • Jeera Powder half spoon
  • Salt to taste
  • Sugar half spoon

How to make Healthy Yogurt:

  1. Curd – make into creamy curd by stirring the curd with stirrer without adding water.
  2. Add grated carrot, grated coriander, grated cabbage, grated onion, small green chilli pieces, dry ginger powder, grated mint leaves, Lemon juice, Jeera powder, dry ginger powder is taken in the container.
  3. Mix well all the ingredients.
  4. Add the creamy curd to the container and mix well.
  5. It’s tasty to eat and healthy too.
  6. It reduces the body temperature especially in summer you can store in refrigerator for an hour and can consume the tasty healthy curd.
