Ingredients:
- Wheat flour – 2 cups
- Semolina – 1 tbsp
- Sugar – 1/2 tbsp
- Salt to taste – 1 tbsp
- Warm Water – 1/2 to 3/4 cup
- Wheat or Plain flour – for dusting
- Oil for deep frying
How to make Puri:
- In a mixing bowl add flour, semolina, sugar, salt and mix well.
- Use small quantities of warm water to mix well until it makes a non-sticky, soft and smooth dough.
- The puri dough must be firmer compared with chapathi dough.
- When you have the dough ready, do make the puris immediately.
- Do not over lap one puri on another to avoid sticking. Mean while heat oil for deep fry.
- Make small puris with all the dough and set aside.
- Heat the oil in a deep pan.
- Fry puries in the oil. Make sure that they puff as you fry them 🙂
- Transfer the Fried puri on to the tissue to remove excess oil.
- Serve them with Potato curry, Egg Burji, Potato-Peas curry, Potato Koorma, Sugar. Of all Potato curry is the best.
- Having the last puri with sugar will be good for taste.
Lets see the preparation of Potato Curry for Puri
Ingredients:
- Oil – 3 tbsp
- Poatatoes – 4 (medium size)
- Mustard seeds – 1 tbsp
- Chana dal – 1tbsp
- Urad Dal – 1/2 tbsp
- Curry leaves – few
- Green chillies – 6 (slit)
- Onions – 2 (big) Sliced
- Turmeric – a pinch
- Salt to taste
- Gram flour/Besan flour – 2 tbsp
- Water – 1 1/2 cup
How to make Potato Curry:
- Boil the potatoes first and cool them (don’t over cook the potatoes).
- Heat oil in a pan and add mustard seeds to it and let them splutter.
- Add Chana dal and urad dal and fry them well.
- Curry leaves and a pinch of turmeric were added and sauté for few seconds.
- Green chillies and sliced onions were also added and fry them till golden colour.
- Mean while peel off the skin from boiled potatoes and cut them into pieces.
- Sprinkle the salt in the golden fried onions pan and mix well and cook for 5 minutes.
- Add boiled potato pieces and pour 1 cup of water into it and place a lid on it and let it cook until the onions becomes transparent.
- Mix water and gram flour in a bowl and pour the mixture into the above pan once the onions were cooked well.
- Mix well and switch off the flame. Potato curry is ready.
- Potato curry is a favourite side dish for puri, chapathi and phulka.
