I tried this with so many different measurements and finally succeeded in getting the best sponge cake. I baked this Cake on my husband’s Birthday. You can expect more of baking recipes hereforth starting with a basic sponge cake. I would love to eat a cake that is freshly out of the oven… Yum! delicioso! So lets start with what goes into the best sponge cake recipe.
Ingredients:
- Self Raising flour – 350gms
- Caster sugar – 350gms
- Butter – 350gms
- Eggs – 6
- Milk – 6 tsp
- Vanilla Essence – 2tsp
How to Prepare Butter Cream Vanilla Sponge Cake:
- Firstly Pre-heat the oven to 180°C.
- Greece the trays or tins with melted butter to the sides.
- Place the parchment paper exactly the size of the cake tray and greece the paper with butter to take out the cake easily.
- Cream the butter and sugar by using electric hand mixer. start mix slowly and as the butter and slowly slowly combines to becomes softer, mix it very fast till you get the right consistency looks very soft and fluffy.
- Whisk the eggs using electric hand mixer until it is foamy and Sift the self raising flour and fold in slowly using electric hand mixer.Add some milk for easy mix
- Finally add the vanilla essence to it and mix well.
- Pour the mixture in cake tin and place the tin in the oven for around 25-30 minutes.
- Then check the cake once and continue baking if needed. You can check by pricking a thin knife..If it comes easily with out any particles the cake was cooked.
- Hot and Yummy cake comes out from the oven is ready to bite.
- Once the cake was ready take out from the oven and cut into pieces and store them in air tight container.

Tips:
Do not open the oven for 30 minutes. If you open, the heat escapes out and the cake will drop down and becomes flat.
How to Butter Cream the Cake:
Ingredients:
- Unsalted Butter – 350 gms
- Icing sugar – 700gms
- Pastel colours
- Vanilla Essence – 2 spoons
Method:
- Switch off the oven and take out the cake from the oven and then separate the cake from the tin and leave it.
- Whisk the butter by using electric hand mixer in a circular direction till you get a soft foam and then add vanilla essence and icing sugar gradually.
- Continue stirring till you get a light and fluffy cream.
Tips:
- If the cream is hard you can add some little amount of milk.
- If the cream is runny refrigerate till it gets little hard.
So the Butter cream and cake were ready. Then slowly apply the butter cream to the cake and make your own decorations with your favourite colour pastels.
For this Cake:
- Divide the Butter Cream Separately and not in equal parts.
- Add Lemon colour to the large portion, mix well and apply all over the cake.
- Add and mix blue colour to one portion and do the boarder with the blue.
- Add and mix Orange colour to small portion. Make Roses with orange and blue colours.
- Use Black, Red and Green gel pastels to write the names.
- Birthday Cake is Ready!
