Choose fresh ripen lychees and clean them in fresh water to remove the dust.
Then Peel or remove the outer rigid coloured part of the fruit with your hand slowly without squeezing the fruit.
Have the colourless juicy, fleshy, sweet fruit, make sure that there is a black seed inside the fruit, which are not for consumption.
You can make a delicious salads by cutting the lychee fruit into pieces with out touching the seed 🙂
