Brinjal fry is one of the favourate recipe’s for many people. Let us see how to cook Brinjal Fry !!
Ingredients:
- Mustard seeds – 1 tbsp.
- Cumin seeds – 1/2 tbsp.
- Urad dal – 1 tbsp.
- Chana dal – 1 tbsp.
- Red chillies – 3
- Few curry leaves
- Turmeric – 1/2 tbsp.
- Garlic – 3
- Brinjals – 1/2 kg
- Onions – 1 small onion (sliced)
- Green chillies – 2
- Ground nuts/Cashew nuts – 1 tbsp.
- Salt to taste
- Chilli Powder – 1 tbsp.
- Garam masala – 1 tbsp.
- Cumin seed powder – 1 tbsp.
- Coriander
How to make brinjals ready to cook :
- Gently wash the Brinjals, pat dry and place on a chopping board.
- Peel off the stem from each Brinjal.
- Cut the Brinjals into two halfs and make each half into three or four in lengthwise (long slices).
- Drop the Brinjals pieces in salt water.
- Filter the Brinjal pieces from water before going into pan.
How to cook Brinjal Fry:
- Heat oil in a wide pan and add musturds to it, when it starts spluttering, add ground nuts or cashew nuts, chana dal, urad dal, cumin seeds, red chillies, turmeric and fried.
- Add green chillies, sliced onions, curry leaves and fried until golden brown colour.
- Then add salt followed by Brinjal pieces and fry for a while.
- Place the lid for 10 minutes to cook.
- Remove the lid and fry well.
- Add chilli powder and cumin seed powder and garam masala powder and coriander to it.
- Mix well and fry more.
- Delicious Brinjal / Egg plant fry is ready .
The best combination is with rice and sambar or can serve with chapathis also.
